Wow this recipe is super good! I used coconut oil with it and it turned out amazing. Here is the recipe link: https://detoxinista.com/coconut-flour-pancakes/ The only thing that I did different was that I added coconut milk to it in order to thin it out. Alternatively I could have used less flour. I think the coconut flour in Sweden soaks up the liquid so much that it was a very thick batter which would have been too thick for pancakes.
It looks like a dessert. 🙂 For Swedish pancakes, which are much thinner and three times as large, it's the opposite. I usually take a little more flour than the recipe says. Otherwise, they risk breaking when you turn them. Especially if you're in a hurry and don't have time to let the batter sit for a quarter or thirty minutes before making the pancakes.
