GF chicken fajita bowl
I found this recipe on evolvingtable.com however for their version you had to make everything from scratch (prepared rice, marinated chicken). So I've put it in my own simpler terms for those in a hurry!
Ingredients:
- 1 large onion - thinly sliced
- 2 large bell peppers - thinly sliced
- olive oil.
- salt
- pepper
- sweetcorn
- black beans
- Avocado - sliced
- salsa, cheese, green onions, coriander and black sesame seeds
- Ready-made rice
- pre-cooked chicken breast
Method:
Preheat oven to 220 degrees.
Toss bell peppers and onions with oil, salt and pepper. Place on a baking sheet and roast for 15 minutes or until vegetables are cooked and onions are slightly golden.

Fill the bowl with rice and top with 4-oz. chicken, roasted veggies, black beans, corn, avocado, salsa, cheese, green onions and black sesame seeds. Serve hot or cold.

#1 I followed the original recipe which said to marinate in salsa and garlic powder, I wouldn't go through the hassle next time and instead, I would buy pre-cooked chicken breast slices from the store.
